Take a 9×13-inch baking dish and spread a thin layer of the whipped cream on the bottom. This will help the graham crackers stick to the dish.

Next, arrange a single layer of graham crackers over the whipped cream, breaking them if needed to fit the dish. Ensure the entire bottom of the dish is covered with a layer of graham crackers.

Spoon a generous amount of whipped cream over the graham crackers, spreading it evenly to create a smooth layer.

Keep layering…

Arrange a layer of sliced strawberries on top of the whipped cream, covering the entire surface. Be generous with the strawberries to achieve a burst of fruity flavor. Repeat the layering process: graham crackers, whipped cream, and strawberries. Continue until you reach the top of the casserole pan, making sure to end with a layer of strawberries on top.

I save a couple of graham crackers to crush up and sprinkle on top, but this is totally optional.

Tips For Making No bake Strawberry Icebox Cake:

  1. Select strawberries that are ripe, fragrant, and sweet. This will ensure the best flavor and juiciness in your dessert.
  2. You can make your own whipped cream by using 2 cups of heavy whipping cream, 1/2 cup of powdered sugar & a tsp of vanilla extract. Just follow the instructions on the side of the heavy cream container.
  3. When assembling the cake, aim for even layers of graham crackers, whipped cream, and strawberries. This will ensure each bite has a perfect balance of flavors and textures.
  4. Once assembled, let the cake sit in the refrigerator for at least 4 hours or overnight. This resting time allows the flavors to meld together, and the cake becomes even more delicious the longer it sits.
  5. Try using other fruits to make this dessert! Blueberries would be an awesome choice! You can even use blueberries, along with the strawberries for a delicious, patriotic dish!
  6. Feel free to experiment with additional garnishes such as mint leaves, chocolate shavings, or extra sliced strawberries. These add a touch of visual appeal and extra flavor to your dessert.
  7. Ensure your Strawberry Ice Box Cake is served chilled for the best taste and texture. It’s the perfect way to beat the summer heat and enjoy a refreshing dessert.
