Easy Poor Man’s Beef Stroganoff Recipe
If you’re looking for a quick, easy and frugal dinner idea that will feed a crew, Poor Man’s Beef Stroganoff will come to the rescue.
I was raised on this dish because my mom had five hungry mouths to feed. It’s was a meal that she could whip up in under an hour and is made with items that are probably already in your pantry and refrigerator.
It’s kind of like a ground beef gravy, that is not only great over egg noodles, it can also be served over mashed potatoes, rice or even toast. There’s another name for that one, but I can’t use that kind of language on my blog. Just say the initials are S.O.S.
If you’re lucky enough to have leftovers, it’s even better the next day!
Poor Man’s Beef Stroganoff
Simple ingredients and so easy to throw together!
Let’s Make It!
Here’s what you need.
As you can see by the pic above, this recipe is made up of basic items that you probably have in the pantry or fridge.
Here’s what you do:
Bring a pot of water to boil and cook the egg noodles according to the package directions. (Not shown).
In a large skillet, brown the ground beef with the onion and garlic. Once it’s cooked thoroughly, drain and set aside.
Add the butter and let it melt.
Then add flour to the melted butter and stir, letting the butter absorb. Add the beef broth and whisk to remove any lumps. Raise temperature slightly and keep stirring until it thickens.
Next, stir in the sour cream and the cream of mushroom soup until it is completely blended. Taste the mixture to see if it is seasoned to the way you like it, then add the beef back to the mixture. Stir and simmer for about 5-7 minutes.
Voila!
Serve over the egg noodles or what ever you prefer.

Poorman's Beef Stroganoff
Ingredients
- 1-1 1/2 lbs. of ground beef or chuck
- 1/2 cup chopped onion
- 1 tsp minced garlic
- 3 Tbsp butter
- 3 Tbsp flour
- 1 can beef broth
- 1 cup sour cream
- 1-2 cans sliced mushrooms optional
- 1 can cream of mushroom soup
- 1 pkg egg noodles cook according to package directions
- salt & pepper to taste
Instructions
- Cook egg noodles according to package directions.
- In a large skillet, brown ground beef, along with garlic and onions, over medium to high heat, until completely cooked.
- Drain the grease from the beef then remove the beef from the skillet and set aside.
- Place pan back on heat and add butter to pan. Let it melt.
- Add the flour to the melted butter and stir.
- Add the beef broth and whisk to remove any lumps. Turn heat up and bring to a slight boil, but only to thicken.
- Lower temp and whisk in cream of mushroom soup and sour cream.
- Add salt and pepper.
- Add ground beef to mixture and reheat.
- Serve over egg noodles.
