How To Make The Best 2 Ingredient Pumpkin Bread”

Nothing says Fall like pumpkin does and when you combine pumpkin with easy & delicious, I’m definitely in!  This 2 ingredient pumpkin bread is made with a box cake mix and canned pumpkin.  That’s it! I’m not kidding!  No eggs, no flour, no long list of ingredients at all!

Sounds too good to be true??  Well, it’s not!

This easy pumpkin bread recipe is perfect for a potluck, breakfast or just an afternoon snack with a cup of coffee! I’ve always loved using cake mixes for breads, easy cake mix cookies, brownies & dump cakes because they make it so easy to get creative. Almost all the ingredients are there!  All you need to add is a moist ingredient and VIOLA! You have an easy, delicious AND frugal treat that’s sure to please!

I love using the spice cake mix for the 2 ingredient pumpkin bread because it comes with all the delicious spices already in the box.  You can also use a yellow cake mix, but you’ll need to add a teaspoon of cinnamon or 1 1/2 tsp of pumpkin pie spice to the mix.

Spice cake also seems to be seasonal around here, so when I see it in the stores, I usually grab a few to keep on hand.

Let’s make it!!

All you need is a spice cake mix, a can of pure pumpkin (Not pumpkin pie filling), a mixing bowl, a (wooden) spoon, a loaf pan and some cooking spray. If you prefer to not mix by hand, you can also use a hand mixer, as well.

Dump the mix & pumpkin into the mixing bowl.

Begin stirring to blend.

Mix until the mix is completely blended with the pumpkin.  The batter will be thick.

Spoon into a greased loaf pan and bake in a preheated oven at 350 degrees for 40-50 minutes.

Pumpkin bread is done with you insert a toothpick and it comes out clean!

Enjoy warm with a pat of butter or sprinkle powdered sugar over the top, like I did.

To make it even yummier, add 1-2 cups of chocolate chips to the batter and/or a cup of chopped pecans or walnuts.

Ingredients

  • 1 box spice cake mix I used Duncan Hines
  • 1 14 ounce can 100% pumpkin puree (not pumpkin pie mix).
  • Optional: 1-2 cups chocolate chips
  • Optional: 1 cup chopped pecans or walnuts

Instructions

  • Preheat your oven to 350 degrees, and grease or line a bread pan.
  • In a large bowl, mix together the entire box of spice cake mix and the pumpkin puree until well incorporated.
  • If you choose to add chocolate chips or nuts, fold them into the batter.
  • Bake at 350 degrees for 40-50 minutes, or until a toothpick comes out clean.
